Description: Citrus australasica, lemon caviar, finger lime or citrus caviar is a shrub or small tree of lowland understory and subtropical rainforests in the border-coastal region of Queenlands and New South Wales (Australia).
The tree is 2-6 m tall. The leaves are small, 1-5 cm long and 3-25 mm broad. The flowering is white with petals 6-9 mm long. The fruit is cylindrical, 4-8 cm long, sometimes slightly curved. It occurs in different colors, including pink and green.
For some years now, caviar lemon has been introduced into haute cuisine, due to its numerous edible vesicles.
